Sweet and creamy, creamier than the richest butter, with hints of sweet grass and sunshine; fresh sheep’s milk cheese from Black Sheep Creamery is indescribably delicious!
Being a lover of all things cheese, and finding myself in a new region with local delicacies I had never tried, I felt like a kid in a candy store; or even better, me in a cheese store!! The cheese counter guy (sorry if there’s a more official title that I’m unaware of) began discussing the local artisan cheese options and handing out samples, all of which were delicious, and then, whammo, he handed over a tiny scoop of fresh sheep’s cheese. Just brought in that morning from the creamery, in limited supply and huge demand, he had only two small crocks left. This stuff was divine creamy, buttery goodness. Yes, please I’ll take a crock of that. I would have taken both but didn’t want to deprive anyone else of experiencing that flavor phenomenon. Fresh sheep’s cheese is made within days of milking, according to Black Sheep Creamery’s website, it is made within three days to be exact.
From a culinary perspective, this cheese is creamy and lovely. I imagine it could be used anywhere you might typically use a cream or ricotta cheese. In fact, I’d love to get my hands on another crock and make a sheep’s milk cheesecake. The flavor is creamy, sweet and savory all at the same time; creamier than either goat or cow’s milk. I ended up spreading it on toast (homemade sourdough), eating it with apple slices, enjoying it on eggs, and even stirring it into a bowl of bone broth.... divine and divine.
From a health perspective, sheep’s milk supplies different nutrients than cow or goat. It is higher in iron, zinc, phosphorous and calcium as well as, vitamins A, B, D, E. It also is a significant source of Omega 3 fatty acid based mostly on the sheep’s diet of grass. Sheep’s milk also tends to be easier to digest and assimilate than other dairy. It is much higher in protein and good fat; possessing a significant amount of medium chain fatty acid. Remember that research suggests that consumption of medium chain fatty acids helps reduce fat deposits and increase satiation, while also boosting cognitive function. Some studies are also demonstrating that the chemical composition of sheep’s milk provides the body with an enhanced ability to absorb the nutrients more efficiently. All in all, it’s definitely worth keeping an eye out for some sheep’s milk products, especially fresh cheese!
