Smooshy, sweet, almost cloyingly sweet in my opinion; bananas are a very popular fruit and can be found in cultures around the world.

bananatreeTechnically, the banana is a berry according to the ranking of its botanical genus. It originates in warmer climates but has managed to make its way into the mainstream market of almost every culture around the globe.

Bananas are a nicely contained option for a quick snack. They are packed with potassium and B vitamins, making them a great option for cardiovascular and nervous system health. Research demonstrates that consuming a banana one hour prior to athletic activities keeps potassium levels higher in the blood and increases the body’s ability to repair and recover. Bananas are also a great option for insuring digestive balance. The combination of fiber, pectin, and fructooligosaccharides make it a great option for gastrointestinal health. The banana supports the cultivation of pre and probiotics.

Bananas have the interesting property of being a little bit of everything.  Yes, they have a higher sugar content but the pectin and fiber help balance it out and the starch actually feeds the healthy bacteria in your colon. If you’re suffering from, dare I say it, diarrhea or constipation, bananas actually can help in both cases. From a commerce and cultivation perspective, they are hardy and at the same time quite fragile.

From a culinary perspective, bananas are again versatile...they add well to both sweet and savory dishes. They are delicious raw and they are also delicious cooked. They can serve as a moistening agent in baked goods and they are a great foundation for grain free pancakes.

bananachoclolaeHere’s a recipe for some crazy delicious grain free Banana Chocolate Chip pancakes:

  • 1 ½ large ripe bananas
  • 2 eggs
  • ½ tsp. vanilla extract
  • ¼ tsp. ground cinnamon
  • 1/8 tsp. baking powder
  • Chocolate chips

Blend all ingredients together. Cook like regular pancakes... I put them in small circles in the pan and then sprinkle the chocolate chips on top of the raw batter while it is cooking. You can also do blueberries or any other type of fruit.
