AIOLI (Green Goddess)

Creamy and rich, with herby goodness that causes my taste buds to dance; green goddess aioli is definitely fit for a goddess. 

herbaioliAioli is a type of ‘sauce’ traditionally made from egg yolks, garlic, olive oil and lemon juice. It appears to have originated in French cuisine, however, variations of aioli sauces can be found in cuisines around the world. The creamy goodness comes from emulsifying the fat of the oil with the egg yolk and the lemon juice and whatever else is being added; in the case of green goddess aioli, herbs like tarragon, chives, parsley were combined with the garlic for a deliciously creamy effect.

From a culinary perspective, traditional recipes call for making aioli in a mortar and pestle, first crushing the garlic, then adding the egg yolk and finally drizzling in the oil while mixing and thickening. The consistency can then be adjusted with the lemon juice. Most aioli sauces these days are prepared with a food processor or are simply flavors added to mayonnaise. The green goddess aioli that I enjoyed with my dinner last night was hand prepared the traditional style in mortar and pestle and it was absolutely amazing. I can’t wait to get home and try to recreate it. Aioli can be served with fish, meats, veggies, as a sauce, a dip, or a spread. It can also be featured as a main entrée as it is in Provence on Christmas Eve.

Aioli IngredientsFrom a health perspective, one might think that with all that fat and oil aioli can’t possibly be good for you. One would actually be wrong. If prepared with fresh ingredients and eaten as a condiment, aioli is actually quite a nice and even healthful addition to your dietary repertoire. The health benefits of olive oil can be found on Day 147, Garlic – Day 260, Egg Yolks – Day 308. But if you don’t feel like tracking those down, not to worry; trust me, it’s all good. Basically, the garlic is an immune boosting, inflammation fighting, antiviral, antibacterial, antimicrobial, pro-digestion, super food. The olive oil provides a significant amount of healthy fatty acids and also works to decrease systemic inflammation and oxidative stress. The egg yolks are little treasure chests of goodness, providing healthy fats, minerals, and vitamins like A, B, and D.
