LIMES (recipe)

Refreshing, juicy, tart, slightly sweet and sour; I find that limes are add something extra refreshing in the heat of summer.

slicedlimesLimes are a member of the citrus family and while many people think a lime is a lime is a lime, there are actually quite a few varieties of lime, each with their own little twist to limeness. (:

It appears that the lime originated in Indonesia but has made its way to tropic and subtropic areas around the globe. First recorded use of limes is in literature dating back about 4,000 years. It has been used in a variety of medicinal, preservative and culinary endeavors across time and culture. One obvious way that limes were utilized as medicine was in ship crossing, the Vitamin C kept the sailors from getting scurvy, hence the name Limey for English sailors. Initially, the use of lime juice was supposedly simply to make the water and other drinkable items more palatable, but then when doctors noted that sailors drinking the lime juice were among the healthiest they realized it had an added benefit.

From a culinary perspective, limes are preservative, sweet, sour, tangy, and can add a nice acidic level without actually impacting the flavor of a dish too drastically.  I love the flavor of lime as an added back note to spicy dishes or anytime I need a refreshing kick. It also makes a cooling tonic, add lemongrass and ginger and you’ve got a really refreshing treat.

From a health perspective, Lime is like its citrus relatives. It is full of vitamin C and other vitamins and minerals. They are also a great source of Limonin, which help reduce the risk of various forms of cancer; most notably mouth, throat, skin, and stomach. Research also suggests the flavonoids in limes can help decrease the risk of auto-immune diseases such as rheumatoid arthritis, type 2 Diabetes, and Graves. Limes help decrease oxidative stress and systemic inflammation.

INGREDIENTS

  • Crust:
  • 1/3 cup almonds
  • 1/3 cup cashews
  • 1/3 cup pecans
  • 6 -8 medjool dates
  • 1 tsp vanilla extract

Filling:

  • 2 ripe avocados
  • 4 dates (soaked and pureed)
  • 3 tbs lime juice
  • 1 tsp vanilla
  • ¼ cup cashews
  • dash sea salt

Topping:

  • 1 cup soaked & drained cashews (soak for an hour or more so they blend smooth and creamy)
  • 2 tbs dates (soaked and pureed)
  • 1 ½  tsp vanilla

Pulse crust ingredients in a food processor until crumbly. Press into a pie plate or small muffin cups. Set in refrigerator to firm. Puree all filling ingredients, pour into crust, place back in refrigerator to firm. Blend all topping ingredients in blender, pour over firm filling ingredients and place back into fridge to set. Once firm, slice and enjoy!
