BROCCOLI

Oh poor broccoli; no other vegetable has been so scorned or revered all at the same time by the same media.

sautebroccoliPeople seem to either love it or hate it. I am one who loves it. I especially love fresh, organic broccoli. I don’t care what anyone says, there is most definitely a distinct difference between organic or sustainably grown broccoli and conventionally grown. Young fresh broccoli has a crispy, crunchy, earthy flavor, with faint hints of sweet. My favorite way to eat broccoli is to quickly blanch it in boiling water and then sauté in coconut oil with garlic....very delicious.

Of course, broccoli is such a mainstream vegetable there are a multitude of ways to prepare it. You can try making it into soup, tossing it as stir-fry, even baking it into a quiche.

From a health perspective, broccoli has the reputation it has for good reason. It is a cruciferous vegetable, which means all the benefits of its kin the Brussels sprout and kale and others. Research demonstrates that the flavonoids in broccoli increase colon health and decrease the potential for colon cancer (and other cancers). Broccoli is also high in vitamin C, K, an A. It is beneficial for cardiovascular health and helps lower blood pressure. Studies suggest that sulforaphane, a chemical compound found in broccoli, can also help repair and prevent damage to small blood vessels caused by diabetes. Broccoli also has the amazing ability, due to a unique trio of phytonutrients, to detoxify the body on a cellular level. Given all the amazing benefits of broccoli, it’s worth giving it a chance...just don’t overcook it! (:
